Healthy Pizza Rollups

The perfect healthy meal for kids and adults!

Ingredients
  

DOUGH

  • 1 cup luke warm water
  • 2 tsp active dried yeast
  • 1 tbsp organic liquid honey
  • 2 tbsp olive oil
  • 1 1/2 tsp salt
  • 1 1/2 cups organic whole wheat flour
  • 1 1/2 cups organic all purpose flour

SAUCE

  • 1 1/2 to 2 cups Assorted Veggies (spinach, onions, peppers, mushrooms, shredded carrots, zucchini, cherry tomatoes)
  • 1 can tomato sauce, crushed tomatoes or organic jarred pasta sauce

Topping

  • 2 cups pizza cheese
  • 2 tbsp fresh herbs

Instructions
 

  • Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  • Combine yeast, sugar and lukewarm (NOT HOT) water in a bowl. Cover and let stand 15 minutes or until the mixture is frothy. Make sure your yeast isn't expired.
  • Mix together Flour, salt and olive oil in a bowl. Pour in frothy yeast mixture and mix together to form a dough. Kneed dough on a floured surface for about 5-8 minutes or use a mixer with the dough attachment and let it run on low speed for 3 minutes. Place the dough in an oiled bowl, cover and place in a warm spot for 1 1/2 hours or until the dough has doubled in size.
  • While the dough is rising make your sauce. Chop up veggies and saute in pan with a little olive oil. You can also roast the veggies in the oven at 400 degrees for 15-20 minutes or until soft for added flavour.
  • Blend the sauce and veggies together in a food processor or Vitamix blender.
  • Check the dough. You can test if it is ready by lightly pressing two fingers in the dough. If dent remains, the dough is ready to use.
  • Turn the dough onto a lightly floured surface and knead until smooth.
  • Roll out dough into a 12" x 8" rectangle using a rolling pin. If the dough springs back and is tough, let it rest another 10 minutes before continuing.
  • Spread the sauce over the dough. Sprinkle with cheese and herbs.
  • Roll the dough lengthwise to resemble a log. Cut into 1.5" wide rolls.
  • Place the rolls cut side down on the baking tray and space 1/2 an inch apart.
  • Top the rolls with a bit more cheese or herbs if desired.
  • Bake at 350 degrees for 25-30 minutes till the cheese is melted and golden.

Notes

I have made the pizza rolls with all types of flour, organic white, organic whole wheat and my favourite combo is half of both organic white and organic whole wheat!
