Add strawberries to a large pot over medium heat and add honey. Stir.
Stir them frequently as they begin to soften.
When the strawberries begin to break down and fall apart mash them with a potato masher or fork to break them up.
Bring the mixture to a slow boil stirring constantly. When you see big bubbles break the surface add the chia seeds and stir.
The mixture might appear liquid but as the chia seeds set they will give it a gelatinous texture and thicken up the jam. Continue stirring over low heat for another 15 minutes then remove from stove.
The jam is now ready for to store in the fridge for a few weeks or for canning. Please follow proper canning procedures to reduce bacteria and allow your jam to seal tightly for food safety.
